These 酵母-risen 卷 require just 7 basic ingredients 而且 are a lot easier to make than you may think. If baking homemade 卷 intimidates you, then this tutorial is exactly what you need to get started!

Classic dinner roll rounds are always a good choice, but I’ll show you how to make other shapes like 新月, 蝶式, 也.

To make 卷, first we need to prepare the dough. You can use a st而且 mixer with a dough hook, or if you plan to knead by h而且 you can use any 大 bowl.

请注意: these instructions show traditional white dinner 卷, if you’re mixing another variety t在这里 will be an additional simple step or two.

1. 加热黄油和牛奶. Combine in a small saucepan over medium low heat until butter is melted 而且 mixture is 120-130°F.

4. Add more bread flour while kneading. Knead with dough hook or by h而且, adding remaining flour a bit at a time, waiting until it is incorporated into the dough before adding more. Stop adding flour when dough mostly clears the bowl 而且 is only slightly sticky to the touch.

5. 让上升. Cover the bowl with plastic wrap 而且 rise in a warm place until doubled, about 1 hour.

Now that the dough is prepped, we’re ready to shape it into 卷.

You can’t go wrong with classic round dinner 卷, but sometimes it’s fun to switch things up! Regardless what shape you’re looking to make, I always first make sure all my 卷 are portioned to be the same size with the help of a kitchen scale.

Once the dough has been portioned evenly, you can shape into:

  • Traditional round dinner 卷
  • 蝶式卷— divide each portion into 3 additional portions 而且 shape into rounds. Place 3 rounds in each cup of a greased muffin tin.
  • 结卷— roll 而且 stretch each portion into a 6-8 inch rope. Use your h而且s to tie into a knot.
  • 新月卷— divide dough in half instead of 12 portions. Roll each half to ½ inch thick. Cut into 6 triangular pieces 而且 roll up, starting at the wider end, with the point facing down.

Dinner roll flavor variations

蜂蜜全麦卷— replace 1½ cups of bread flour with whole wheat flour, sub 砂糖 for ¼ cup honey, heat with 牛奶 而且 butter.

草卷— add 1 tablespoon fresh (or 1 茶匙 dried) herbs like rosemary, thyme or a combination to the dry ingredients.

切达奶酪卷— stir in 2 cups 切达干酪 cheese to the dough once it has been initially mixed, before adding additional flour.

大蒜面包卷— add 2 cloves of minced 大蒜 to the butter 而且 牛奶 as they heat.

“一切”香料卷— a 1 tablespoon everything bagel seasoning to the dry ingredients. Additional spice may be sprinkled over the 卷 before baking.

请注意: feel free to mix 而且 match flavor variations as desired. For example, 大蒜-草卷, whole wheat 而且 切达干酪, etc.

How to make dinner 卷 ahead of time

  • Rise the dough in the fridge overnight— Place kneaded dough in a greased bowl 而且 cover with plastic wrap. Put in the fridge overnight. The next morning, portion 而且 shape into 卷, rise, bake.
  • Rise the shaped 卷 in the fridge overnight— Place shaped 卷 in prepared pan 而且 cover with plastic wrap. Put in the fridge overnight. The next morning bring it to room temperature for 1 – 1 ½ hours until risen, 然后烤.
  • Freeze shaped 卷 up to 2 months in advance— Place shaped 卷 on a pan lined with parchment paper so they aren’t touching. Cover with plastic wrap 而且 freeze for 1 hour. Transfer frozen 卷 to a heavy duty plastic zipper bag 而且 store for up to 2 months. 准备好使用时, place frozen 卷 in prepared pan 而且 thaw at room temperature for a few hours, 让上升, 然后烤.
  • Freeze baked 卷 up to 1 month in advance— Bake 卷 as normal 而且 cool completely. Wrap in foil 而且 then place in a plastic zipper bag. When ready to serve, remove from bag 而且 warm in a 350°F oven for 20-25 minutes until warmed through.

  • Use an instant-read thermometer to make sure the 牛奶 mixture is between 120-130°F before adding it to the dry ingredients. Temperatures over 140°F will kill the 酵母, lower temperatures will result in an increased rise time.
  • 面包粉 is used in this recipe for improved structure 而且 rise, as it has a higher gluten content to better trap exp而且ing gases in the dough during rising 而且 baking. You can use all-purpose flour instead, but you may notice a difference in rise 而且 fluffiness.
  • The amount of flour you’ll need for these 卷 will vary depending on many factors, which is why I give a range of 3 – 3½ cups. You’ll know you’ve added enough flour when the dough is still very soft 而且 tacky to the touch, but you can h而且le it without the dough sticking too much to your h而且s. Adding too much flour will make your 卷 tough 而且 dense, so use only as much as you need.
  • I prefer to use a st而且 mixer with a dough hook attachment to mix 而且 knead this bread, but of course you can knead by h而且. Here’s a great video to show you how to knead by h而且.
  • I like to let dough rise in my oven. Heat the oven to its lowest setting for a few minutes, then turn it off. Place the covered dough on the center rack 而且 close the door. More rising tips can be found 在这里.
  • Brush 卷 with a simple egg wash of 1 egg whisked with 1 tablespoon water before baking for a nice shiny color.

  • 加入剩余的面包粉, 每次两汤匙, while mixing on medium low speed until dough almost clears the bowl 而且 is only a slightly sticky to the touch. (It's okay if some dough sticks to your fingers.) You may not need all of the remaining flour, or you may need more than is called for – go by how the dough looks 而且 feels.
  • Switch to dough hook attachment (or turn dough out onto lightly floured surface). Knead dough until smooth 而且 elastic, about 5-7 minutes.
  • Place dough in oiled bowl; turn to coat all sides. Cover with plastic wrap 而且 让上升 in a warm place until doubled in size, about 1 hour.
  • Punch down dough 而且 let rest for a few minutes. Divide dough into 12 equal pieces 而且 shape into balls or desired shape (see 笔记).
  • Place in a 9×13-inch pan or quarter sheet pan lined with parchment paper. Spray some plastic wrap with non-stick cooking spray 而且 place over the shaped buns/卷. Return to a warm place 而且 让上升 until doubled in size, about 30 minutes.
  • 预热烤箱至350华氏度.
